Athena VII is more than just a coffee shop and bistro; we are a supporter of shopping local first. You may or may not have heard that saying before. Living in the Salt Lake City area, it’s almost impossible to not hear that at some point. Athena VII not only believes local first is an economically-sustainable approach but also helps to promote local farms and supply chains, as well as the environment.
Local food often means fresher food. When produce is harvested closer to the point of sale, it spends less time in transit and storage. This results in fruits and vegetables that are not only more flavorful but also richer in nutrients. Freshly picked produce retains more vitamins and minerals compared to items that have been shipped long distances and stored for extended periods. This increased freshness translates to better taste and more nutritional value, directly benefiting our health.
One of the most significant advantages of eating local food is the reduction in carbon footprint. The average meal in the United States travels about 1,500 miles from farm to plate. This transportation requires fossil fuels, contributing to greenhouse gas emissions and climate change. By opting for locally sourced food, we can significantly cut down on these emissions. Athena VII is a firm believer in shopping local first. Our entire menu – from our breakfast burritos (scrambled eggs, peppered bacon, onions, peppers, and cheese, served with freshly made salsa) to our Chicken Caesar Salad (chicken, romaine lettuce, chef’s own Caesar dressing, shaved parmesan, and fresh-baked croutons) consists of food made with locally-grown ingredients whenever feasible.
